Sri Lankan coconut fish

This recipe surprised me, when I started looking at Sri Lankan recipes I was overwhelmed by how different and delicious they were, but this one contained leeks?? Hmm, not an ingredient I would necessarily associate with Sri Lanka, however, being low in calories and containing potassium, folate, iron and fibre, does it matter? Mix this up with some juicy white fish, high in protein, vitamin A, D and B12 and coconut oil containing easy to metabolise fatty acids, this recipe gives you all the goodness you need.

Sri Lankan Coconut Fish
Prep Time: 10 mins
Cook Time: 30mins
Serves: 2
Ingredients:
4 white fish fillets
1 tbsp. coconut oil
1 large leek (trimmed and cut into thin discs)
2 tsp. curry powder
4 tbsp. coconut yogurt
Seasoning
150g Brown Rice
Coriander leaves to garnish

Method:
Add the rice to a pan of boiling water and simmer for 30 mins
Take another pan and add ½ the coconut oil in a melt over a medium heat – add the leeks
Cover and let them sweat for 5 mins – stir occasionally
Add curry powder and stir – reduce heat to prevent burning
Add yogurt and seasoning, stir, cover and turn off heat
In a frying pan add the remaining coconut oil and over a medium heat cook the fish, for 7 mins – turning once half way through
Drain rice and share between the serving plates
Place 2 fillets of fish on top of each bed of rice and cover with the sauce  – sprinkle with coriander
