Spicy pumpkin & coconut soup

 
Brrr, it is getting chilly!! Wrap up cosy and warm your cockles with another tasty recipe. Spicy pumpkin and coconut soup, gluten free, dairy free, full of nutrients and vitamins, a bowl of this will get you fired up again.

Soups, stews and casseroles are fantastic options for keeping our calories and fat down for the winter but are full of flavoursome vegetables feeding your body with protein, fibre and goodness. Ingredients
1 medium sized pumpkin (deseeded and cubed)
1 large onion (diced)
2.5cm of ginger (finely chopped)
2 garlic cloves (finely chopped)
½ red chilli (deseeded and finely chopped)
1 can (400ml) reduced fat coconut milk
sea salt and freshly ground black pepper

Method
Place the pumpkin in a large pan with the onion, ginger, garlic and chilli
Pour in 400ml of water, bring to the boil and cook until the pumpkin has turned to mush
Add the coconut milk and season to taste with salt, reduce the heat and simmer for 5–10 minutes
Serve up and warm up (ideal for dipping gluten free bread in - this is optional!)

This recipe should serve 6 normal sized bowls, however, if you are hungry it may only feed 3!! For more recipes click here
