Cauliflower curry

Ingredients:

  • 500g peeled potatoes
  • 1 cauliflower
  • 2 garlic cloves
  • 4g ginger
  • 1 chopped onion
  • 2g (1/2 tsp) Coconut oil 
  • 1 green pepper diced 
  • 1tsp turmeric
  • 1tsp curry powder
  • 1tsp mustard
  • 1 can of chickpeas (drained)
  • 2 handfuls of spinach
  • 2 tbsp coriander
  • 200g brown rice 

Serves 2 (with a small portion of curry leftover for lunch)


1. Boil cauliflower for 5 mins and boil potatoes for 10 mins. Drain but keep 200ml of water
2. Fry onion, garlic and green pepper in coconut oil until soft
3. Add turmeric, curry powder and mustard and mix together 
4. Add potatoes, cauliflower and 100ml of left over water 
5. Simmer on low heat until it starts to go soft 
6. Add rest of water and leave for 5 mins to cook
7. Add chickpeas and spinach - cook for 3 mins
8. Cook 200g brown rice for 25-30mins 
9. Drain rice and serve curry on top with a sprinkling of coriander and black pepper.
